I just got a recipe for homemade protein bars off of Good Eats.
4 oz soy protein powder
2.25 oz oat bran
2.75 oz whole wheat flour
.75 oz wheat germ
1/2 tsp kosher salt
mix well
in another bowl:
4 oz dark brown sugar
12.3 oz soft silken tofu
2 large eggs
1/2 cup unfiltered apple juice
2/3 cup natural peanut butter
mix well
Add dry mixture and blend well.
Mix in 6-10 oz dried fruit
Spread into a well oiled 9X13 pan and bake at 350degrees for 35 minutes.
Cool completely and store in fridge
154 cal, 21g carbs, 8 g protein, 5g fat, 2g fiber, 91mg sodium, 17g chlesteral
I baked these yesterday and they are pretty good. Definitely not gooey.
