Slow Cooker Chicken Creole
4 skinless, boneless chicken breast halves salt and pepper to taste Creole-style seasoning to taste 1 (14.5 ounce) can stewed tomatoes, with liquid 1 stalk celery, diced 1 green bell pepper, diced 3 cloves garlic, minced 1 onion, diced 1 (4 ounce) can mushrooms, drained 1 fresh jalapeno pepper, seeded and chopped 1. Place chicken breasts in slow cooker. Season with salt, pepper, and Creole-style seasoning to taste. Stir in tomatoes with liquid, celery, bell pepper, garlic, onion, mushrooms, and jalapeno pepper. 2. Cook on Low for 10 to 12 hours, or on High for 5 to 6 hours. |

Hawaiian chicken:
couple of chicken breast little bit of BBQ sauce cut up green pepper couple (depends on taste) chunks pineapple tsp minced garlic Just throw it all in and serve it over rice. If you cook it to long the chicken will dry out. I know this isn't very specific....it's been a long time since I've made it! |

Does anyone have a crockpot chili recipe? I'd like to cook up a big batch to freeze.

Quick Turkey Chili
sm onion, chopped 1 lb ground turkey breast 1 can (14.5oz) diced tomatoes with jelapeno peppers 1 can (10.5oz) chickpeas, drained 1 can (10.5 oz) black beans, drained 1 can (10.5oz) kidney beans, drained 1 can (14oz) low sodium chicken broth 1/4 tsp salt 1/4 tsp ground cumin 1/8 tsp ground cinnamon hot sauce Throw it in a crock pot and cook. I add some chili powder to mine because I like my chili to taste more like chili than what the recipe does. I got the recipe from the Abs Diet book. Prevention puts out a supplement every now and then and there are recipes in the back. The foods for that diet are much the same as for BFL. They call them power foods on that diet. |

Awesome Roshanda thanks! Just bought my first pack of turkey this weekend. I'll fix this recipe on Sunday and freeze for the next week.

This is a great crock pot recipe, you just throw it all in there and walk away. You just have to make sure the meat is broken apart. If it stays in a chunk, it won't cook in the middle.

Holy Crap! I made the turkey chili & there's no freakin' way it's healthy! Tastes TOOOO good! I'm in love! Hehehe. Had for lunch today...

I did! It doesn't brown, it stays white, but there's NO grease. After it cooked, I added diced peppers & onions to it & some seasonings & let it cook. I also cooked it on high in my crock for about 5 hours. Mmmmmm

I have done it both ways. You can throw the turkey in there un-cooked but it takes longer to cook and you have to make sure you break it apart. It is easier to cook it first and it turns out better, but you do not have to cook it first.

Butternut Barley Risotto
1 butternut squash (peeled, seeded, cut into 1.5 inch pieces) 1 onion, diced 1 cup diced tomatoes 5 cups chicken broth 1 cup pearl barley 2 Tablespoons chopped parsley salt and black pepper to taste The recipe says to blanch the cut up squash in boiling salt water for about 3 minutes. It turns out better if you do this. Throw everything in a crock pot and cook. The recipe calls for cinnamon as well which I used the first time I made it. It gave it a funny flavor that neither me or my husband liked. I leave it out now. Also, the way the actual recipe is written, it takes a couple of hours to make this (on the stove). I don't like to cook, so I don't make it that way. If anyone is interested in the real recipe, let me know. |

I wonder what would happen if you left the skins on the squash? Just thinking out loud since I had read that the skins are where all the vitamins and lots of the fiber live...shall I be brave and try mine this weekend with half skinned and half not?

Butternut squash has a really hard skin. I don't know how it would cook. All you can do is try. Let us know what happens.

Maybe you could grate the skin, or throw it in the food processer?

I never peel the squash. I either slice or cube it up. I just don't get them too big. The peel cooks fine and isn't too tough.
