Ground turkey with sweet potatoes & asparagus

I made this dish and put it in four separate containers for lunches during week.


1 lb. ground turkey breast
Two small sweet potatoes (can cook in microwave for 5-6 minutes or they can be leftovers that were previously baked)
1 lb asparagus (each stalk cut in thirds depending on size)

After browning the ground turkey breast in cooking spray, throw in the cubed sweet potatoes, and the asparagus. Add about 1 TB cumin, salt, pepper, and 1 tsp. chilli power according to taste and simmer for about 10 minutes. For something a little different, this was a delicious dish!

I cooked the sweet potato maybe too long and it almost melted into the dish - which tasted awesome - but if you prefer bigger bites, don't cook so long beforehand.

That sounds AWESOME. I am a big fan of all 3 key ingredients. I will definitely try this recipe this week. I am in my 8th week (day 51). Down 7.5 pounds - feeling GREAT! New way of life FOR SURE!

ASPARAGUS ROCKS! I can't wait till spring so we can go harvest the wild ones. Those are even better!

mygirls, that is so cool to hear you have made great progress.
k.k. the asparagus in this combination tastes awesome. It could work with other veggies, but not the same!
