Curried turkey and peas!

INGREDIENTS

1 lb. ground turkey
2 cans black-eyed peas
2 tbsp. curry powder
1 tbsp. minced garlic
1 tbsp. oregano
2 tbsp. safflower oil
1 can cream of chicken soup (I use 98% fat free)
1 can cream of something else soup (I use onion, but mushroom or broccoli would also be tasty... 98% fat free again)

DIRECTIONS
1. Mix curry powder and safflower oil and heat in a small skillet until fragrant.
2. Mix all ingredients together in a big pot.
3. Cook until turkey is done.

You can use this in many ways! It is great as a dip with whole wheat crackers or as a burrito in a whole wheat pita or tortilla shell. This recipe makes a ton of the stuff, but it's just as good reheated so you can make it in advance and eat it for days!

Don't worry about the curry powder... you can barely taste it. If, however, you WANT to taste the curry, you should probably add some more.

It's my first attempt at making a BFL-inspired dish, so feel free to critique it. I'm still learning, after all!

Sounds like a great recipe! I never thought of using the ff soups for a dip or burrito filling. I love this idea! Thanks, I'm gonna try it.

What do you think of only using one can of soup and eliminating the peas?

I substitute green beans for higher cal veggies in most recipes. They really don't have much taste...so thet blend well with other tastes and thy're supper low in calories.
