Protein bars...homemade?
Hi all,
I would like to use bars as some of my meals/snacks for convenience for my second challenge coming up...but they are way too expensive, and I know that many store bought bars have too much sugar/too many additives. So, I was wondering, does anyone actually make their own? I tried it once and it came out a gooey (gross) mess. I think one problem was that they weren't baked, so didn't really solidify. ![]() |

Yes! I do this all the time. My favorite is actually a frozen bar...tasty for summer.
For 200 calorie one bar combine: 1 tsp no sugar added nut butter (peanut or almond) Half a scoop vanilla whey powder (approximately 15 grams protein) 1/3 cup oats mix together with a little milk or soymilk until you can shape into a patty. I wrap my "bar" in wax paper and pop it in the freezer until solid. Sometimes I even throw a half dozen dark chocolate chips on top. Makes a delicious snack on a hot day ![]() |

Thanks, that would be a good one for when I'm at home...I'm looking for some recipes on baked bars to take to work (that won't require a fork to eat). I'll post any good ones that I find.

I am a huge protein pancake fan - I make them at least 5 days a week.!

Hey, Andy. What's the recipe for the protein pancakes or where can I find it? I've done some looking around and found several but wondered which one you use.

Hey Schultz... these are amazing.
1 pack of sugar free flavored quaker oatmeal 1/2 cup of egg whites 1/2 cup of fat free cottage cheese blend, grill, and serve. I don't even use syrup or honey on these... the cottage cheese keeps them nice and the flavored oatmeal is awesome. If you would rather use the bulk e-oatmeal and flavor yourself (cinnamon, etc) - check the weight of the quaker packets - i have found that its the perfect amount.

Two whole eggs ("extra large" size) should be pretty close to 1/2 cup of egg whites, I think.

I'm going to add oatmeal and cottage cheese to my grocery list tonight and try protein pancakes tomorrow. They sound terribly easy to produce.
Do they taste like real pancakes, or do they taste more like cottage cheese? |

I buy the egg white cartons - you get 4 batches to one of the small cartons.

I just got a recipe for homemade protein bars off of Good Eats.
4 oz soy protein powder 2.25 oz oat bran 2.75 oz whole wheat flour .75 oz wheat germ 1/2 tsp kosher salt mix well in another bowl: 4 oz dark brown sugar 12.3 oz soft silken tofu 2 large eggs 1/2 cup unfiltered apple juice 2/3 cup natural peanut butter mix well Add dry mixture and blend well. Mix in 6-10 oz dried fruit Spread into a well oiled 9X13 pan and bake at 350degrees for 35 minutes. Cool completely and store in fridge 154 cal, 21g carbs, 8 g protein, 5g fat, 2g fiber, 91mg sodium, 17g chlesteral I baked these yesterday and they are pretty good. Definitely not gooey. |

Whoa! Andy, man, those are really good! Just got to try them this morning and wow! I'll be making those a lot. I used Quaker Weight Control Banana Bread oatmeal and they were awesome! Thanks again for the recipe!

The BB is a good flavor - Cinamon and apples and raisin are another great option!

I've started calling these custard cakes. They are so delicious! I eat them almost every day now.
Oh, and I tweaked your recipe just slightly. I didn't care for the consistency with the current packet of oatmeal I have so I figured out it's all half cups if you use regular oats.. 1/2 c eggs, 1/2c cottage cheese, 1/2 c quick oats, splash vanilla extract, and a little raw sugar (I like a little sweetener in mine, and don't like splenda, which could work instead). Rock on Andy!

I'll give it a whirl with your recipe and see how I like it - but I do like the convenience of 3 ingredients, mix, pour, flip, eat.
