Carb/Carb and Protein/protein diet

Two questions about the nutrition
1. If i eat two carbs as a part of one mail (like rice+beans or rice+lentils or bread+potato), then can I adjust this with eating two
proteins (egg white+peanut butter, cottage cheese+egg white, myoplex shake+soy) Is this fine. Are there any points I should keep in
mind like not eating carb-carb or protein-protein just before sleeping etc?

2. I remember there is a formula to know much protein you should be consuming in a day (its g of pounds you weight like I weigh 132 pounds
so I need 132 g of protein). In the same way how do we calculate carbs for one day? Especially when vegans mostly eat only complex carbs
(fruits/lentils/vegetables), should I really bother if my carb intake is higher?
