Beef Jerky healthy or not?

Hi,
What's the verdict on beef jerky as a food? I didn't see it on the "authorized foods" list in Bill Phillip's book. It appears to be a convenient high-protein snack that has little fat but it doesn't exactly conform to the principle of "less processed is better." Plus it has a lot of sodium. Just wondering the consensus.

IMO The sodium is a drawback...but I use it as a grab and go protein....Like most things, I think it's fine in moderation. I think it's probably less processed than a myoplex bar.
