NEFERT is on the road to a better life
Pesto

My husband and I are on our 4th week and we are doing great!

But, I have a craving for Pesto. I normally use pine nuts, basil, evoo, grated parm cheese, and garlic mixed with angel hair pasta and grilled chicken. I don't know the measurements that I use, I just pour until I think that I have enough.

Does anyone know of a way to make Pesto and not be cheating? I know that I have my free day but, I would like to be able to make a healthy version.

I don't think pesto is cheating. You are allowed 2 servings of "fat" per day, this would be 1 of them. Try to keep it on the low side, probably 1 tablespoon per serving. Eat this with whole wheat pasta and some protein and you're all set. It's really easy to overeat pasta so watch out for that. Enjoy!
