Healthy Nachos
This was requested by Darlene. I've been eating this about every 2 weeks lately when I host "game night"
Healthy nachos: -Blue, yellow, or white corn, or someother chips -Black and/or refried pinto beans -Chopped veggies (tomatoes, peppers, onions, etc.) -Fresh cilantro -Light shredded cheese -Ground turkey (browned and seasoned with cumin, salt, pepper, and garlic) -plain nonfat yogurt spread out chips on a plate in a balanced proportion to the other ingredients (about a handful), top with the ingredients (save yogurt 'till end) in whichever combination makes you the happiest (it doesn't matter). I like to add a few chips, layer the toppings, add some more chips and repeat. It's good to sprinkle the cheese between different layers rather than all in one pile. Bake the whole plate in the oven (set to about 400) and bake till cheese is melty. Top with a few dollops of yogurt. Naturally this recipe involves a lot of carbs. Make sure you keep that in mind when combining ingredients. Just for the record, beans, yogurt, and chips need to balance with meat and cheese. Let me know if I've forgotten anything. Enjoy! ![]() |

Oh and watchout the plate will be hot upon leaving the oven. I set it ontop of another plate and serve.

Chris: Thnx for the recipe...
May I just add one tidbit? My hubby taught me this (and he's not doing BFL)...he takes 2 WW tortillas and cut them into little strips...then baked them in the oven to substitute for the chips...They are nummers! I think he lightly sprays pan with Olive Oil Pam and bakes for 15 - 20 mins on 300 (I like mine crunchy, so this bake time might vary for you)... |

You can also make your own delicious corn chips by cutting corn tortillas into triangles (strips, whatever shape you like LOL) and spraying them with a bit of pam, then putting them on a cookie sheet (don't overlap) and baking at 400 while keeping an eye on them (they burn FAST LOL!).
I use them to make nachos, bring them to parties with pico de gallo, etc... they rock! My kids actually *prefer* these chips to the store bought ones and I do, too... less fat, less junk and you still get the crunch and flavor HTH! Lo |
