juicer pulp bread
I found this recipe online (sorry for the strange font, something's out of whack). Anyway, I didn't like the ingredients as it stands so I made the modified version below this recipe.
CARROT PULP BREAD 2/3 cup of vegetable oil 3/4 cup of honey 2 eggs 1-1 /2 cups of carrot pulp 1-1 /2 cups of whole wheat flour 1 teaspoon of cinnamon 1 teaspoon of baking soda 1 teaspoon of sea salt (optional) Mix the oil and honey together as well as you can, then add the eggs and mix again. Stir in the carrot pulp. Now add the remaining ingredients and mix well ... pour the resulting concoction into a greased loaf pan (measuring approximately 8-1/2" X 4-1/2" X 2-5/8") ... and bake in a pre-heated 350°F oven for 60 to 65 minutes. Instead of 2/3 C veg oil, I used about 1/3 C omega oil (veg oil, but healthier I guess) and 1/2 C apple sauce (unsweet). Instead of honey, I used 3/4 C sorghum (molasses would probably work too). I left out the salt and substituted baking powder for the soda. Everything else was according to plan. Other additions: Handful flax and sunflower seeds, and 2 scoops vanilla whey. My pulp wasn't exclusively carrot. It's carrot, beet, ginger, apple. This bread has the texture of banana bread and is actually very very good! It unfortunately has a bit more sugar and oil than I'd like to have, but it's still a very healthful snack. I'm eating 1.5 slices with nuts for a snack right now. ![]() |

I made this again yesterday.
Much to my surprise, this combination of pulp still makes delicious bread: Beats, carrots, apples, ginger, cabbage, cucumber, spinach, potato, and star fruit (basically a little of everything in the fridge went into this juice). It smells like vegetables, but doesn't taste like it. |
